The tasty, tender meat simply melts in your mouth, and those who try this balyk for the first time almost unanimously agree that the dish tastes more like fish than chicken. In any case, it is very delicious.

1. Rinse the breast; if it is too large, divide it into two parts and place it in a dish. Separately mix salt, cognac, pepper, spices, and paprika, and add a bay leaf. Now add the spice mixture to the chicken and rub it in thoroughly. Cover with plastic wrap and let it sit in the refrigerator for about 12 hours.

2. Now take out the brisket, rinse it under running water, pat it a little dry, wrap it in cheesecloth—and let it sit in the refrigerator for another two or three days. It all depends on how rich a flavor you prefer.
