
Lamb Balyk
Description
The appetizer is quick and simple to prepare. Although this homemade lamb balyk takes a long time to make, it invariably turns out to be of excellent quality, with rich flavor notes. So buy a good lamb (the “younger” the meat, the less noticeable the distinctive aroma will be) and prepare this balyk for your guests and relatives. Serve with fresh herbs and sauce.

1. Wash the meat, remove the skin and excess fat, and pat dry. Then place it in a bowl. Mix the salt with the pepper and coat the meat with this mixture. Refrigerate for 12 hours. Then scrape off the salt — and refrigerate for another 12 hours without seasoning.

2. Now mix all the herbs together and add a little more salt. Generously rub the meat with this mixture on all sides. Then wrap it in cheesecloth, but not too tightly.

3. Hang these "mummies" on a hook and let them cure for one and a half to two weeks in the refrigerator.
