
Balkar khychiny
Description
The recipe won't take much time. I suggest making Balkarian khychiny with a filling of potatoes, cheese, and herbs. They are quite simple to prepare, the ingredients are basic, and they turn out very tasty! You can serve the khychiny with tea or milk, or use them as an alternative to bread for hot dishes. Serve them warm or chilled. Perfect with tea.

Prepare all the ingredients.

Cut the potatoes, cover them with water, and boil until tender.

While the potatoes are boiling, let's make the dough. In a deep bowl combine kefir and baking soda. Stir, then add water, salt, and flour.

Knead a soft dough. Gather it into a ball, cover with a towel and let it rest for 20–30 minutes.

Drain the water from the cooked potatoes and mash them until there are no lumps. Add chopped herbs, grated cheese, and pepper to taste. If necessary, add salt.

Mix everything well.

Divide the rested dough into 7 pieces. Also divide the filling into 7 portions. Take each piece in turn, flatten it and roll it out a little. Shape the filling into a ball and place it in the center of the dough disc. Gently and evenly stretch the dough around the filling, lift the edges upward and pinch them well.

Slightly press the resulting ball with your hand and let it stand for a few minutes, and in the meantime you can shape the next balls. Then gently and gradually roll each ball out into a circle, with a thickness of 3‑5 ml.

Place the rolled-out khychin on a heated dry skillet. Fry over medium heat for a couple of minutes. At this stage the flatbread may puff up. Carefully pierce it to release the steam.

On the other side, fry the hychin for about two minutes until browned spots appear.

After frying, brush each flatbread with butter, paying special attention to the edges. Balkar khychiny are ready.
