Balkan pie
Description
The recipe won't take much time. I want to share an interesting recipe from Bulgarian cuisine—Dismana pie. It consists of small buns with or without filling, poured with an egg mixture and baked in the oven. Tender, filling, and very delicious! I recommend it to all lovers of homemade pastries. Let me tell you how.
Instructions
- 1
Step 1

1. Prepare the ingredients for the dough, filling, and topping. In addition to feta cheese, the filling includes a lot of greens, such as spinach, green onion, dill, parsley, or cilantro.
- 2
Step 2

2. Mix the milk with warm water, add salt, sugar, and yeast. Stir until the yeast is completely dissolved.
- 3
Step 3

3. Add the egg white and vegetable oil, mix well.
- 4
Step 4

4. Add the sifted flour in portions and knead the dough. You may need 3 to 4 cups of flour, but do not make the dough too stiff—it should be soft and airy.
- 5
Step 5

5. Cover with a clean cloth and let stand in a warm place for 30 minutes.
- 6
Step 6

6. For the filling, crumble the feta cheese by hand, add finely chopped dill and egg white. Mix well.
- 7
Step 7

7. Divide the dough into equal-sized pieces. Stretch each piece with your fingers and place a portion of the filling inside. It's convenient to do this by holding the dough in your hand.
- 8
Step 8

8. Gather the dough into a "bundle", seal well. Flip it over.
- 9
Step 9

9. Grease the pan with vegetable oil. Place the buns seam side down. The diameter of my pan is 20 cm.
- 10
Step 10

10. Prepare the dressing using kefir, milk, egg yolk, and butter. Simply whisk the ingredients together with a fork.
- 11
Step 11

11. Pour this mixture over the buns. Place in a preheated oven (190 degrees) for 30-40 minutes.
- 12
Step 12

12. The dish is ready. Let it cool slightly in the mold, then transfer to a rack or serve immediately.
- 13
Step 13

13. Very tasty when warm!
