
Balish
Description
Perfectly pairs with tea and coffee. Tatar balish is a festive dish, and every housewife has her own favorite, time-tested recipe. For the filling, you can use any meat, poultry (such as goose), or offal. Besides potatoes, you can add cabbage or pumpkin. Sometimes rice is used instead of vegetables in the filling. The baked dish is ready. Serve at the table.

First, prepare the dough. Put sour cream and kefir into a large mixing bowl, add the egg, then mix in melted cooled butter, vegetable oil, and a pinch of salt. Stir well, add baking soda neutralized with vinegar, and mix again.

Then gradually add the sifted flour and knead the dough. When it becomes smooth and elastic, shape it into a ball, wrap it in plastic wrap, and let it rest on the counter.

For the filling, wash the meat and cut it into 2x2 cm cubes.

Peel the potatoes and onion, wash and cut: slice the potatoes the same way as the meat, and finely chop the onion.

In a bowl, mix the meat, potatoes, and onions, then season with salt and pepper to taste. The filling is ready.

Prepare a deep baking dish or a deep skillet and grease it with oil.

Knead the rested dough, divide it into 2 parts in a ratio of approximately 1:3. Set aside a small piece of dough, which will be needed to seal the opening for the broth.

Roll out the larger part of the dough thinly and place it into the baking dish, letting the edges hang over the sides by 5-6 cm. Place the filling onto the dough.

Roll out the smaller portion of dough into a circle, place it over the filling, and seal the edges with the base of the pie. Crimp the edges with a "rope" pattern. Make a small round hole in the center of the pie for the broth, and cover it temporarily with a "lid" (a small ball of dough).

Brush the top of the balish with melted butter and place it in a preheated oven at 200 degrees. Bake the cake for about 2 hours.

After an hour and a half, remove the "lid" and pour in the hot meat broth. Cover the opening again and bake the pie for another 30 minutes until golden brown.

Sprinkle the finished pie with water, cover with a kitchen towel, and let it stand for 5–10 minutes before serving. Tatar balish is served directly in the baking dish in which it was cooked.
