
Eggplants Baked with Cheese
Description
Here is a simple recipe for preparing eggplants baked with cheese. Make cuts in the eggplants and insert tomato slices, herbs, and cheese slices into them. Meanwhile, prepare a sauce from tomatoes, garlic, sugar, salt, and lemon juice. Add the sauce to the eggplants as well. Bake the dish in the oven until done; at the end, sprinkle with grated cheese, let it melt, and remove from the oven. Serve hot or cold. Good luck. The appetizer is ready. Serve immediately.

Wash the eggplants and cut off the stems. Then cut each eggplant (not all the way through) into 4–5 sections. Rub the inside with salt and pepper and set aside for 15 minutes.

Peel the tomatoes, dice them, and sauté in a pan with sugar, salt, pepper, and lemon juice. Also add garlic passed through a press. Simmer for 7–8 minutes until the mixture turns into a smooth sauce.

Transfer the eggplants to a baking dish. Into the cuts, place a few tomato slices, herbs, and cheese slices.

In the remaining space, spread the tomato sauce with a spoon. Bake the dish in the oven for 20 minutes at 200°C. Then sprinkle with grated cheese and bake until melted.
