
Eggplants in Egg
Description
Perfect with meals and drinks. Egg-fried eggplant is an excellent summer appetizer. It cooks very quickly and is eaten just as quickly. Serve them with sour cream, mayonnaise, ketchup, or any other sauce to your taste. The appetizer is ready. Serve immediately.

Wash and peel the eggplant.

Cut the eggplant lengthwise into 5–7 mm thick slices.

Sprinkle the eggplant pieces with salt and let stand for 6–7 minutes.

Pour flour onto a plate and coat each slice of eggplant in the flour.

Lightly beat the egg as for an omelet and dip the eggplant slices in the egg on both sides.

Place the eggplants in a hot skillet with refined sunflower oil.
