
Eggplants in pots
Description

Slice the eggplants into rounds, soak in water for 5-10 minutes, then dry with a paper towel

Fry the eggplants in olive oil on both sides until slightly golden.

Dice the onion

Sauté onion and garlic in olive oil until translucent.

Cut the potatoes into wedges

Chop the herbs.

Layer eggplants, tomatoes, onions, herbs, and potatoes in pots. Pour water over, add salt and pepper, and place in a preheated oven at 180 degrees. Bake the eggplants in pots for about an hour.
