This recipe won't take much time. 1. The preparation of eggplants stewed with meat is extremely simple. First, wash and dry the meat. You can use either pork or beef. Cut the meat into small portion-sized pieces. 2. Heat a little vegetable oil in a skillet and add the meat. Sear over high heat until golden brown. 3. Meanwhile, prepare the eggplants. Cover with a lid and simmer until fully cooked. This may take from 45 minutes to 1.5 hours, depending on the type of meat and the size of the pieces. Add more water or broth if needed. 6. About 10–15 minutes before the dish is ready, peel the garlic and press it through a garlic press (or grate on a fine grater). Add rosemary and garlic to the skillet.
