
Eggplants with Plums
Description
Perfect for the table and with drinks. We only need three ingredients—plums, eggplant, and pepper. We'll add spices to brighten the dish. This appetizer isn't like anything else, but trust me—try it once and you'll make it often. It's important to choose plums that are firm and ripe. We use bell pepper, sweet, and we'll also add a little dried garlic and salt. You can serve the appetizer on its own or as a side dish. Be sure to try it. Serve the appetizer at the table.

Prepare the ingredients.

Rinse the eggplants and pat dry, then slice them into small thin slices. Optionally, sprinkle the eggplants with salt and let sit for 10 minutes, then rinse and pat dry. If your eggplants are not bitter, this step is optional.

Remove the seeds from the bell pepper and cut out the membranes. Then cut the pepper into small strips.

Wash the plums and dry them, then remove the pits. Cut the plums into small wedges.

Heat the vegetable oil in a skillet, add the eggplants and peppers, and fry over low heat for 5–7 minutes until done.

Add the plums, salt, pepper, and a little dried garlic to taste to the skillet.

Mix everything and cook over low heat for 3–4 minutes. At the end of cooking, taste and adjust the seasoning. Divide the appetizer among plates and serve.
