
Eggplants with herbs

Cut the eggplant into thin lengthwise slices. Heat oil in a skillet, arrange the sliced eggplant in it, cover with a lid and fry for 4 minutes over medium heat. Then remove the lid, turn the eggplant over and fry for another 4 minutes uncovered.

While the eggplants fry, combine finely chopped herbs, onion, garlic, salt, and wine vinegar. Stir well and leave in a cool place for 30 minutes.

Place a little filling on each eggplant slice and roll into a roll. Refrigerate the rolls for 2 hours, then serve cold.
