
Eggplants with Cheese and Garlic (Rolls)
Description
A tasty appetizer for any gathering. Eggplants pair well with nuts, especially walnuts, as well as fresh herbs and different types of cheese, so each roll can be made with its own filling, or you can mix several together and wrap them all up. The appetizer is served cold and garnished with chopped herbs. It can be served warm or chilled.

Wash the eggplants and trim off the stems, slice the vegetable into thin slices. The thinner, the better. Wash the tomatoes and cut them into thin wedges.

Place each slice on a baking sheet lined with parchment paper, brush with olive oil, and sprinkle with salt.

Bake in a preheated oven at 200 degrees for 8-10 minutes, then transfer to a plate.

In another bowl, add the cream cheese, chopped garlic, walnuts, and cilantro, then season with salt and pepper to taste.

Place the filling in the center of each slice of eggplant, then add several slices of tomato and carefully roll into rolls.
