
Eggplants with Nuts and Cheese

Wash the eggplants and slice them into thin slices with a thin sharp knife. Place the sliced eggplants in a deep bowl, add a teaspoon of salt, and pour in enough water to cover the eggplants. Soak for 20–25 minutes.

While the eggplants are soaking, let’s make the filling. Chop the walnuts. You can do this in a blender or a meat grinder. Or you can use a rolling pin.

Grate the cheese on a fine grater and add to the nuts.

Peel the garlic and pass it through a garlic press, add it to the nuts with cheese. Also add ground pepper, chopped herbs, and sour cream. Mix everything well.

Drain the water from the eggplants, pat them dry with a paper towel, and fry them in a well-heated skillet with vegetable oil.

Fry until beautifully golden brown on both sides. Place on a paper towel to absorb any excess oil.
