
Eggplants with minced meat baked in the oven
Description
The recipe won't take much time. Eggplants with minced meat are very similar to the well-known "boats," with the only difference being that here the eggplant isn't cut in half lengthwise, but simply has a slit made in the middle. Serve hot.

Wash the eggplants and make a cut in the middle. Bake in the microwave for 5-6 minutes or in the oven for 30-40 minutes. The eggplants should be almost cooked.

Prepare the filling. Peel the onion, wash it, and finely chop. Place in a frying pan with refined sunflower oil.

Sauté the onion until translucent and add the minced garlic.

Place the meat mince in a frying pan. I'm using chicken mince, but you can use any type according to your preference.

Brown the minced meat, stirring constantly, for 10-12 minutes.

Remove the skin from the tomato, chop it any way you like, and add it to the pan with the minced meat. You can use tomato juice, as I do, prepared for the winter.

Mix the ground meat with tomato, season with salt to taste. You can add pepper, along with any herbs and spices.

Fill the eggplants with the prepared stuffing.

Place a slice of tomato on each eggplant.

Pour the eggplants with chopped tomatoes, tomato juice, or tomato juice.

Bake in the oven for 35-40 minutes at a temperature of 185-190 degrees.

Grate any hard cheese. Remove the eggplants from the oven, sprinkle with cheese, and return to the oven.
