Or you can simmer it on the stove over low heat—it will turn out a bit crumbly, but still like a casserole. Of course, the dish will look most attractive if baked in the oven, but you always have a choice.

1. Slice the eggplants into rounds, sprinkle with salt, and wait for them to release their liquid. Then rinse under cold water and fry on both sides in a dry skillet. Let cool.
