
Tuscan-style eggplants
Description
The dish is prepared without unnecessary complications. Who said eggplants are only for caviar or fried rings? Eggplants work wonderfully in stews, and they can also be baked, for example. Italians, who love both vegetables and baked goods, offer their original eggplant recipe, which I discovered during my trip to Italy. For making Tuscan-style eggplants, you can use ready-made ciabatta to simplify the cooking process. See the photo recipe below. The finished dish can be served immediately.

Wash all the vegetables and cut them into medium cubes.

Place them in a baking dish.

Now let's make the dressing: mix olive oil with Provencal herbs, garlic, and pepper.

Pour the dressing over the vegetables and place them in a preheated oven at 180°C for 15–20 minutes. The vegetables should brown and become crispy.

Take out the vegetables and let them cool down.

Cut the ciabatta in half lengthwise. Generously spread with cream cheese.

Now place mozzarella on the ciabatta, then add the vegetables, and top with the other half of the ciabatta. Mozzarella can be substituted with feta cheese. Optionally, you can also add thinly sliced bacon.

Now put the ciabatta in the oven for 2-3 minutes. Enjoy the Tuscan-style eggplants while the bread is still warm. You can cut it into several pieces. That's it! )
