Serbian-Style Eggplants

It works both for holidays and for everyday meals. Summer is the season when vegetables ripen, so during this time you should pay special attention to dishes made from them and include as many as possible in your daily diet. Since my favorite vegetable is eggplant, I want to share an interesting way to prepare it and tell you how to make Serbian-style eggplant. Here you will find an excellent combination of ingredients, and despite the simplicity of the recipe itself, the dish will turn out wonderful. I make it not only for everyday meals but sometimes serve it at festive tables; my guests are always delighted by it. Be sure to try making Serbian-style eggplant at home — I hope you and your loved ones will enjoy the taste. Serve the appetizer at the table.

    Rinse the eggplants under water, cut off the tops, and slice lengthwise into strips about 0.5–1 cm wide. Sprinkle the eggplants with salt and let stand for 30 minutes.

    Now let's prepare the dressing for the eggplants. Mince the garlic and put it in a bowl. Add the zest and juice of one lemon, finely chopped parsley, vinegar, olive oil, a little sugar, and mix everything together.

    Place the walnuts on a dry skillet and toast them for a couple of minutes, then chop them and add them to the sauce.

    After half an hour, rinse the eggplants under cold water, squeeze them dry, and fry in a pan until golden. Place the fried slices on paper towels to remove excess oil.

    Transfer the eggplants to a flat plate, brush with the prepared sauce, and sprinkle with ground pepper. Let the dish rest for about 15 minutes so the flavors can soak in, then serve. Bon appétit, everyone!
