Moldovan-style eggplants

    First, rinse the eggplants and slice them into pieces about one centimeter thick. Sprinkle the sliced eggplants with salt and place them under a weight for a couple of hours to remove bitterness.

    After the time has elapsed, place the eggplants into a frying pan with hot vegetable oil and fry them on each side until golden brown.

    Finely chop the onion and pour boiling water over it, then transfer it to the saucepan in which the eggplants were cooked. Fry the onion for 3-4 minutes, then add a little boiling water and simmer over low heat for another 2-3 minutes, then transfer it to a bowl.

    Now layer the ingredients in a saucepan: first place thinly sliced tomatoes, then eggplant slices and sautéed onions. Repeat the layers once more, and finish with a final layer of tomatoes. Lightly salt and pepper each layer, sprinkle with chopped garlic and herbs, and add lemon acid to taste. Cover the saucepan and simmer over low heat for 20 minutes.
