Instructions
- 1
Step 1

1. We need to cut the eggplants like a "book". You can also cook all the vegetables separately, cutting them into cubes, but I prefer this way more.
- 2
Step 2

2. Leave in salted water for 15 minutes, then rub with garlic and fry in vegetable oil. It's better to grate the garlic on a fine grater.
- 3
Step 3

3. Boil the chicken fillet and slice it into thin pieces. You can also fry the fillet—according to your preference and taste.
- 4
Step 4

4. Slice the bell pepper and add it to the pan to fry. Reduce the heat and season with salt to taste at the end of cooking.

Step 5

5. Now we can stuff our eggplant with the sautéed vegetables and chicken fillet. If you are cooking everything separately, do it as follows: fry the eggplant in cubes, then add tomatoes, bell pepper, garlic, and finally the chicken fillet. Cook until done, season with salt and pepper, add seasonings to taste, and serve.

Step 6

6. When serving, sprinkle everything with hard cheese. You can also garnish with parsley.

Step 7

7. And, of course, the highlight is the hot chili pepper, which clearly indicates this dish is from Mexican cuisine. It's also nice to serve homemade Mexican-style eggplants together with corn.
