First, peel the garlic and ginger and mince them, then grind the cumin in a mortar or crush it by any convenient method.

Wash the eggplants, slice them into 1 cm thick pieces, sprinkle with salt, and fry in a pan with oil until golden brown.

Now take a clean frying pan, add a little oil, heat it, and place garlic and ginger in the pan. Fry for about half a minute. Then add cumin, chili pepper, honey, and juice of one lemon, mix everything, pour in half a cup of boiling water, and bring the mixture to a boil.

Transfer the fried eggplants into this mixture and heat everything over low heat for 10 minutes, adding a little salt if needed. Then remove the pan from the heat, and once the eggplants have cooled down, transfer them to a dish and refrigerate for about half an hour.
