
Macedonian-style eggplants
Description
The dish is prepared without unnecessary complications. I kept hesitating to cook Macedonian-style eggplants at home, but finally decided to give it a try. I was very pleased with the result, as this dish added variety to our usual meals. As it turned out, even with such simple ingredients, you can prepare a very tasty dish. The finished dish can be served at the table.

1. First, let's prepare the tomatoes. I usually pour boiling water over them and remove the skin. After that, I blend them in a blender, but you can also pass them several times through a meat grinder.

2. Place the crushed tomatoes over heat and bring to a boil, adding minced garlic and vegetable oil.

3. Now proceed to the eggplants: peel the vegetable, slice into rings, and fry on both sides in vegetable oil.

4. Now rub them with garlic and chopped parsley. Then carefully place them into a heatproof dish and pour the tomato sauce over the top. Add seasonings to taste.

5. Place the eggplants in the oven, lightly sprayed with vinegar. Bake for about half an hour and serve as a standalone dish, pouring the sauce on top.
