Crimean-style Eggplants

Description

The recipe won't take much time. Crimean-style eggplant can be served in a salad bowl or spread on toast or bread and served as hearty vegetarian sandwiches. This appetizer will still taste good once it has cooled. Adjust the amount of herbs to your taste. For this appetizer, the eggplant can be cut into rings, half-rings, or cubes, whichever you prefer. I prefer half-rings. If the eggplant skin is young and thin, you don't need to peel it. Serve with herbs and sauce.
