
French-Style Eggplants
Description
Like most French dishes, French-style eggplants are a very filling and quite high-calorie dish. As is known, you can generally experiment with omelets in every possible way. Therefore, when I first made this dish, I was not even surprised by the presence of eggplants in it. To make French-style eggplants, one medium vegetable will be enough for you. Also, this meal can be prepared for dinner. See the recipe with photos below. It can be served warm or chilled.

Wash the tomatoes, slice them into rounds first, then into quarters.

Cut the eggplant into rounds.

Now whisk the eggs with milk and spices.

Lightly fry the eggplants on both sides, then pour the egg over them. Arrange the tomatoes on top. If desired, you can drizzle with soy sauce.

Cover the omelet with a lid and cook for another 5 minutes. Wash the potatoes and cut them into any pieces you like (I usually cut them into strips). Grease a baking tray with oil, spread the potatoes on it, and place it in a preheated oven for about 30 minutes. Wrap the cooked potatoes in the omelet and voila—our French-style eggplants are ready. Serve with coffee for breakfast, optionally drizzled with lemon juice. )
