Nevertheless, Chechen dishes are perfect for a large feast with drinks and cheerful guests. To prepare Chechen-style eggplants, you will need a lot of oil—for frying. Wash and peel the eggplants, cut them into strips about one centimeter thick. Season with salt and pepper, then fry in oil on both sides.

Place the fried eggplants on a plate, making sure they don’t break. The eggplants should cool down.

Now we make the sauce: mix sour cream with chopped herbs, garlic, and spices. You can use khmeli-suneli or turmeric.
