
Adjarian-Style Eggplants
Description
The recipe won’t take much time. Dedicated to eggplant lovers. An excellent appetizer from Georgian national cuisine — Adjara-style eggplants. It keeps well in the refrigerator, but no longer than 14 days. Serve the appetizer at the table.

Step 1

Place a pot with 1.5 liters of water on the heat and add 3 tablespoons of salt. Cut the eggplants into 4 parts and place them in the boiling water; cook for 10–12 minutes.

Blend the cilantro, celery, and vegetable oil using a blender.

Finely chop the onion and bell pepper.

Drain the water from the boiled eggplants and cut them into 2–3 cm pieces.

Mix all the vegetables together, add salt, sugar, vinegar, and water, as well as the blended mixture.

Mix thoroughly and place in the refrigerator for one day. After a day, the dish is ready to eat!
