And for everyone who respects eggplants as much as I do, I am sharing a recipe for winter eggplant preserves "Mother-in-law's Tongue" — an excellent option for those who like a bit of heat. The preparation principle is very simple: we mix all the vegetables, add a little zest, pack the salad into jars, and enjoy it all winter long. It will look great even on a holiday table, and I am sure your guests will enjoy eating it. So add this simple winter eggplant recipe "Mother-in-law's Tongue" to your list of must-make preserves, and you will not regret it.

    To start, wash the eggplants and cut off their stems.

    Place the eggplants in a deep bowl and generously sprinkle with coarse non-iodized salt; mix everything together and let sit for half an hour. This is done so the bitterness leaves the eggplants. When the time is up, rinse the eggplant slices under cold water.

    Remove the stems and seeds from the bell peppers and hot peppers, wash them thoroughly, and cut them into pieces.
