1. First, wash the eggplants, pat them dry a little, and remove the stem.

2. With a sharp knife, cut the vegetable into thin slices.

3. Now for a fairly important step: the eggplants need to be salted. Add a little more salt than you would use for other vegetables. Let them sit for about 5 minutes, then remove the salt with a paper towel. You can also rinse the eggplants under running water.

4. Using a brush, coat the eggplants with vegetable oil on all sides.

5. All that’s left is to put them on the coals and fry until golden brown on both sides. Don’t dry out the eggplant—don’t keep them over the fire too long.

6. You can serve the eggplants at the table with sauce or by rolling cheese with herbs inside them, for example. Rolls made from such eggplants are simply amazing!
