
Pan-Fried Eggplants
Description
This appetizer is quick and easy to prepare. Since almost everyone in my family celebrates their birthday in the summer, all our feasts take place at our country homes. A country home, of course, implies simplicity, but we still want something delicious! One of the highlights of the summer table is pan-fried eggplant. A very festive, tasty dish! Pan-fried eggplant can be prepared in advance; it is good both cold and warm. Prepare and serve with fresh herbs and sauce.

Slice the eggplants into rings, soak in water for 10 minutes, and pat dry.

Fry the eggplants in a pan on both sides until done.

Slice the tomatoes into rounds

Chop the herbs finely

Mix mayonnaise with minced garlic

Layer spices, garlic mayonnaise, herbs, and tomatoes on eggplant slices in several layers. Let stand for 15–20 minutes. You can sprinkle the top layer with grated cheese and bake in the oven for 5 minutes.
