
Eggplants fried with peppers and tomatoes
Description
In summer, when vegetables are significantly cheaper and at their most nutritious, vegetable dishes are especially delicious! I like to simply serve this with a slice of fresh bread, but this recipe also works perfectly as a side dish to complement the flavor of meat or poultry. The dish is juicy, aromatic, and incredibly tasty, and it's easy to prepare! Definitely worth trying.

Prepare all the ingredients.

Wash the eggplants and cut them into large slices or quarters. Place them in a preheated pan with oil.

Fry the eggplants, stirring occasionally, until almost cooked, then transfer to a plate.

In the remaining oil, sauté the diced onion until lightly golden.

Add the tomatoes cut into wedges, bell pepper cut into large squares, and diced garlic to the sautéed onions.

Sauté the vegetables to the desired degree of doneness.

Return the eggplants to the pan, adjust the seasoning with salt, add pepper, and cook for another 3-5 minutes.

At the very end, add any fresh herbs. I added basil and parsley.
