
Eggplants Fried with Mayonnaise and Garlic
Description
Perfect with meals and drinks. This is a recipe from Georgian cuisine, with plenty of aromatic spices. In our country, a more popular version is a pyramid of eggplant and tomatoes layered with garlic mayonnaise. The appetizer can be served while still warm, or after it has cooled. Store the appetizer in the refrigerator.

Wash the eggplants and slice them into thin rounds. Heat a skillet with vegetable oil, arrange the eggplants in a single layer, and fry until golden brown.

Meanwhile, finely chop the onion and parsley, place them in a deep bowl, and mix.

Place the fried eggplants in a bowl with the onion and gently mix so the eggplants don't break.

In a mortar, mix all the spices (except the red pepper), add the garlic, and mash well.

In a separate bowl, mix the mayonnaise with red ground pepper.

Place the prepared spices and mayonnaise on the still-warm eggplants, and mix so that each piece is coated with mayonnaise.
