
Eggplant dip
Description
It's better to prick the eggplants with a fork and brush them with vegetable oil before baking. This sauce will become a favorite for all eggplant lovers. If you don't like basil, substitute it with cilantro—it will be a completely different sauce, but still delicious. Serve the sauce with meat or fish, or use it as a salad dressing.

1. Bake the eggplants in the oven at 200 degrees for 35-40 minutes.

2. Cool the eggplants, cut them in half, and scoop out the flesh with a spoon.

3. Transfer the eggplant flesh to the blender container, add basil and parsley leaves.
