
Eggplant balls
Description
The recipe won't take much time. It's an alternative version of meatballs, using eggplants instead of minced meat. After baking, they can be served with tomato sauce—marinara would be perfect. The dish is complete on its own, so it can be served for lunch or dinner to both adults and children. Definitely worth adding to your collection. Serve hot.

1. Wash, dry, and cut the eggplants into small cubes. In a frying pan with oil, sauté the garlic for a minute, then add the eggplants. Cook over medium heat for about 20 minutes, stirring occasionally.

2. Blend the eggplants in the blender bowl, previously cooled.

3. Add the eggs, grated cheese, salt, pepper, chopped herbs, and breadcrumbs. Mix thoroughly until smooth.

4. Shape into small balls, place them on a baking sheet and bake for about 25 minutes at 180 degrees.

5. Then you can place it in the tomato sauce and simmer for another 5 minutes before serving.
