**Jewish-style eggplant caviar**
Description
It's suitable for both special occasions and everyday meals. There are several versions of Jewish-style eggplant caviar. I make it according to this recipe, as do my mother and grandmother. Add as much onion and garlic as you like, depending on how sharp you want the caviar to be. You can leave out the vinegar entirely, but our family likes it. All eggplant lovers should enjoy this caviar, though like any dish, it comes down to personal taste. It can be served warm or chilled.
