
Fried Eggplant Caviar
Description
Suitable for both holidays and everyday meals. Eggplant caviar is an excellent vegetable appetizer—moderately spicy, healthy, and delicious. Those who like spicy dishes can add hot pepper. Serve the aromatic caviar with a piece of fresh bread, croutons, or toast. It’s a good start to any meal. Serve with fresh herbs and sauce.

Step 1

Peel and wash one large onion and a carrot. Cut the onion into rough pieces, and grate the carrot. Place in a skillet.

Wash the eggplants, peel them, and cut into cubes. Add to the pan with the carrots and onion.

Chop the tomatoes any way you like and add them to the other vegetables.

Pour in sunflower oil, add salt and sugar.

Cover the pan with a lid and cook the caviar over medium heat, stirring frequently, until all the vegetables are done, 30–40 minutes.

Then add the garlic. I grated it, but you can add it in pieces.

Blend the vegetables with a blender until smooth.
