Instructions

Step 1

1. Prepare the starter. Mix the yeast, 2 tbsp of flour, and sugar. Dilute in warm water. Cover with a lid and wait until it starts to ferment.
- 2
Step 2

2. Meanwhile, peel the onion and finely chop it. Fry in vegetable oil until golden brown.
- 3
Step 3

3. Mix the sifted flour (I used half regular, half oat) with salt and onion. Add another 100 ml of water and mix with the ready sponge.
- 4
Step 4

4. Knead the dough thoroughly. The result should be elastic, yet slightly sticky dough. Let it rise in a warm place.
- 5
Step 5

5. When the dough has doubled in volume, knead it down and roll it out.
- 6
Step 6

6. From this flatbread, shape the future baguette—make a braid, a roll, or a sausage shape—whatever works for you.
- 7
Step 7

7. Place on a baking sheet lined with parchment paper. The baguettes can be brushed with the oil left over from frying the onions.
- 8
Step 8

8. Bake in a preheated oven for a maximum of half an hour, until a crust forms.
