Description

The recipe won’t take much time. There’s no need to worry that the pastries won’t turn out. In fact, making Badambura is very easy and enjoyable. Each pastry has its own individual pattern. For this, it’s important to roll the dough as thin as you can—then there will be more layers and the pattern will look nicer. Serve warm or chilled. Perfect with tea.

    Prepare the necessary ingredients.

    Melt 80 grams of butter. Cool.

    Add sour cream and sugar to warm water. Stir. Add the yeast. Mix well and leave for 10 minutes.

    Add the egg yolks to the cooled oil. Mix.

    Pour in the yeast mixture. Mix.

    Add salt and sifted flour. Add the flour in portions.

    Start mixing the dough with a whisk. Once it begins to come together into a ball, knead it by hand, sprinkling in a little flour as needed.

    The finished dough should be soft and pliable. Round it into a ball and transfer it to a bowl. Cover with plastic wrap. Leave in a warm place for 1 hour.

    After the time is up, the dough will have noticeably increased in volume; it is ready to shape.

    Divide the dough into 8 equal parts.

    Melt 50 grams of butter.

    Roll each portion out into a very thin sheet. It should be almost translucent. Brush it with butter. Do this with each piece of dough.

    Stack the greased dough sheets in a pile.

    From the wide side of the sheet stack, roll into a tight roll. Wrap carefully, pulling and tightening as you roll. Then slice the roll with a very sharp knife into pieces 2 cm thick.

    Arrange the cut pieces of dough on the work surface with the cut side down. Make an indentation in each piece, but do not press firmly with your fingers or you will disturb the pattern on the outer side. Into each indentation place about 1 heaped teaspoon of chopped nuts, followed by 1–2 cherries (depending on their size).

    Pinch and seal the edges of the dough the way you would for a regular filled pastry. Turn it over so the seam is underneath.

    Arrange the pies on a baking sheet lined with parchment paper. Bake in an oven preheated to 160°C for 20–25 minutes.

    When the time is up, check the pastries for doneness. Badamburas should be lightly golden and feel very light. Remove them from the sheet, dust with confectioners’ sugar, cool, and serve.
