It will be perfect with tea and coffee. To make the cheese pancakes light and cottage‑cheese‑like, you don’t need to add flour to the batter. Semolina is barely noticeable, so it’s an ideal choice. It’s important to let the base rest in the refrigerator for at least 30 minutes before frying. If desired, the cottage cheese can be sifted beforehand.
