
Grandma's Puffs
Description
Homemade baked goods for tea. I recommend greasing the flatbreads with lard, not margarine or butter. This makes them much fluffier and all the layers more pronounced. The finished flatbreads taste almost neutral, so they can be served both with soup and with tea accompanied by jam or honey. I suggest making grandma’s puffy buns and treating your loved ones to this wonderful homemade pastry. They can be served with tea or coffee.

Prepare all the ingredients.

Warm the kefir until it is lukewarm, pour it into a deep bowl, and add sugar, salt, and the yolk.

Stir, add 200 grams of flour and yeast.

Mix everything again and gradually add the remaining flour. Knead a soft dough by hand. Gather it into a ball, cover with a clean towel, and place it in a warm spot to rise for about an hour.

The dough should increase about twofold.

Roll out the risen dough on the table using a rolling pin. Cut the pork fat into pieces and fry it, set the crispy cracklings aside for now (they can be used for serving), and pour the rendered lard from the pan and brush the rolled‑out dough with it. I had ready‑twisted pork fat, which I melted in the pan. If possible, wait until the lard slightly solidifies; it will be easier to spread on the surface of the rolled dough.

Roll the greased dough into a log, then twist it as shown in the photo – from the ends toward the center, but in opposite directions.

It should turn out something resembling an eight.

Cut it into two parts and pinch the edges. Press each part with your hand, then roll it out. Prick the surface with a fork and leave it on the table for 20 minutes, covering it with a towel.

Heat the oil in a pan and fry the flatbreads on each side until golden brown.
