
Grandma’s Pirozhki
Description
Delicious baked goods for the whole family. You can use any filling for the pastries. I like pastries with stewed cabbage. For extra heartiness, I add ground meat to that filling. They can be served with tea or coffee.

To make pirozhki, prepare the ingredients you need.

Mix the warm milk with the yeast, sugar and salt.

Add melted butter.

Gradually stir in the flour and knead the dough.

Shape the finished dough into a ball and cover with a towel. Place in a warm spot for 1–1.5 hours to rise.

To prepare the filling, fry the ground meat for 5–7 minutes. Then add the chopped carrot and onion. Fry everything together for a couple more minutes.

Next, add the shredded cabbage. Stir. Simmer over low heat for 15–20 minutes. Add salt and spices to taste. If needed, you can add a little water. If the cabbage is fresh, it will release enough juice for braising. Let the finished filling cool.

By then the dough will have risen well. Punch it down with your hands, then you can shape the pies.

Divide the dough into portions and fill with the filling.

Place the pies on a baking sheet. For a golden-brown finish after baking, brush them with egg yolk or milk. For decoration, sprinkle with sesame seeds. Let the pies rest for about 10 minutes. Then bake in an oven preheated to 180°C for approximately 20–25 minutes.

The baked pirozhki have puffed up and turned golden. Take them out of the oven and let them cool a little.
