
Grandma's Gingerbread Cookies
Description
Perfectly pairs with tea and coffee. I love making these little cakes with apricot jam, but you can use apple or any other jam of your choice. Just make sure the jam is thick and won't spread too much. Also, for making grandmother's little cakes, take a teaspoon of spices—especially cinnamon and cloves. If you want the cake to be darker in color, add brown sugar, toasted beforehand, to the dough during mixing. Serve cooled or slightly warm.

Break the egg into a bowl, add sugar.

Rub thoroughly.

Add honey, cinnamon, cloves, and baking soda.

Mix everything and gradually add the flour.

Knead the dough.

Preheat the oven to 180°C. Grease the pan and sprinkle with breadcrumbs.

Place the dough in the pan and smooth it out evenly, as evenly as possible, to bake.

Chop the almonds finely, or even grind them in a blender, but don't turn them into crumbs. Sprinkle the dough with almonds.

Bake in a preheated oven at 180°C for 25 minutes. At the end, you can sprinkle the cake with brown sugar to get a golden crust.

Let the cake cool slightly, then cut it in half and spread apricot jam on it.

Then cover the gingerbread again and you can cut it into portion pieces.
