
Grandma's buns
Description
Homemade baking for tea. When choosing jam for baking, prefer a thick one without liquid. This increases the chance that it won’t leak out. To keep the buns from losing shape or tearing during baking, be sure to allow time for proofing and kneading. Otherwise, the recipe is simple and accessible. Serve warm or chilled. Perfect with tea.

Prepare the necessary ingredients.

In warm water (36‑38 °C) mix the sour cream. Add the yeast. Stir.

Add salt, sugar, and eggs.

Stir well.

Add the flour in parts, stirring with a spoon each time. As soon as it becomes difficult to stir, switch to hand kneading.

Grease your hands with vegetable oil and knead the dough well. Shape it into a ball, transfer it to a bowl, cover with a towel, and let it rest in a warm, draft‑free place for 1 hour.

After the time is up, give it a quick knead, shape it again, cover with a towel, and let it rest for another hour.

When the dough rises again, give it a fold and divide it into 12 equal pieces.

Roll each piece into a flatbread about 12–14 cm in size.

Place 1.5 tbsp of thick jam on the dough flatbread. Spread it a little. Leave a 3–4 cm margin from the edge of the flatbread. and make a cut, repeat on the other side.

Lightly stretch the cut and pull the opposite side of the pastry. This way the jam will end up in the middle, as if in a "window". Seal the edges of the bun so that the jam does not leak out during baking.

Place the prepared buns on a baking sheet. Leave them for 10 minutes. During this time, preheat the oven to 180 °C. Before putting the buns in the oven, brush them with egg yolk. Bake for 25–30 minutes.

Remove the baked buns from the oven. Let them cool slightly and take them off the baking sheet.

Serve the buns with your favorite drinks, but especially delicious with milk.
