
Honey Babka
Description
The baking process is simple and quick. We usually associate yeast-based baked goods with sweetness, but this is a different case. Sugar doesn't help yeast when used in excess—too much sugar actually slows down yeast activity. The dough is unsweetened, using only 1 tablespoon of sugar just to activate the yeast. It rises perfectly, bakes up wonderfully, and becomes so porous that it soaks up the honey syrup like a sponge. That's why this honey cake turns out sweet and delicious! If you squeeze a piece of the finished cake firmly, honey syrup will drip out. All ingredients in my recipe are precisely measured—I weighed the flour, as a measuring cup doesn't provide accurate weight. Do not alter the ingredients or change the amounts, especially the flour, and you'll achieve an excellent result. Serve warm or chilled. Perfect with tea.

Prepare the ingredients. The butter should be at room temperature, soft.

Dissolve yeast, salt, and sugar in warm milk.

Add the eggs, mix well.

Add all the flour, start mixing the dough with a spoon, and add the oil during the process.

Knead a soft dough, try to knead it well until the dough becomes as smooth and uniform as possible. It should not be dense, but rather sticky.

Grease the mold for honey cake well with odorless vegetable oil or butter. Spread the batter with a spoon. Cover with a clean, dry cloth and place in a warm spot for 40 minutes. There should be no drafts. Since the batter is not thick, try not to shake it.

After 30 minutes, turn on the oven to 180 degrees. Watch how the dough has risen, it's airy. Carefully transfer it to the preheated oven and bake for 30-35 minutes, depending on your oven—mine took 30 minutes.

While the "baba" is baking, mix the honey, water, and lemon juice.

Take the "babka" out of the oven.

While it's still hot, pour over the honey syrup. Reserve about one-third of the syrup. Let the "babka" cool in the pan.

Transfer the honey babka from the mold to a plate, and pour the remaining syrup over the top.
