
Rabbit Azu
Description
The dish is prepared without unnecessary complications. The recipe doesn't require special culinary skills, and if you follow all the recommendations, you'll end up with a delicious main course. There are many variations of azu, but this particular recipe has become one of our family's favorites. I hope you'll enjoy it too! Rabbit meat is low-fat, dietary, easily digestible, white meat (with little myoglobin), and high in protein. Thanks to these qualities, rabbit dishes can be eaten daily. To make the rabbit meat tender and juicy, I suggest marinating it beforehand. It turns out very tender and delicious! Be sure to save this recipe. The ready dish can now be served.

Prepare all the ingredients.

Wash the rabbit, dry it, and cut it into several pieces. Add mayonnaise, mustard, 1-2 cloves of crushed garlic, salt, and spices to taste. Mix well and let marinate for 2-3 hours. You can also leave it overnight.

Cut the potatoes into cubes and fry in a pan until golden brown.

I cook azu in a cauldron, but you can use any thick-bottomed cookware. Pour in the oil, heat it up, add the pieces of meat and fry them on all sides until golden brown.

Add the diced onion and carrot.

Sauté everything together for 5-7 minutes. Then add tomato paste and diced cucumbers.

Continue cooking for a few more minutes.

Add the potatoes, bay leaf, and season with salt. You can add about 0.5 cup of water. Simmer, covered, over low heat until the potatoes are cooked.
