
Tatar-style horse meat azu

Azu made from horse meat is prepared roughly the same way as beef azu. Well, maybe it takes a bit longer, though not necessarily—it depends on the meat you have. Melt the butter in a frying pan.

Cut the horse meat into small, preferably long pieces. Place them in a frying pan.

Sear the meat until it turns a nice golden brown color.

Peel the onion, then slice it into thin rings.

Place the fried meat into the cauldron, and fry the onion in the frying pan.

Transfer the onion, fried to a light golden color, to the pot with the meat.

Pour the broth over the meat, add tomato paste, salt, and ground pepper. Place over heat, bring to a boil, then reduce the heat. Let it simmer for about an hour over low heat. Cooking time depends on the meat quality and may take longer.

Cut the cucumbers into thin long strips. Peel the potatoes and cut them into small bars as well.

Simmer the cucumbers in a small amount of water. Fry the potatoes until half-cooked. Then add both the potatoes and cucumbers to the pot with the meat and simmer together for 20–30 minutes.
