
Turkey Azu
Description
The dish is prepared without unnecessary complications. 1. Cut turkey fillet into strips (1 cm wide, 4 cm long). Season with salt and pepper. 2. Finely chop the carrots and onion. Cut the celery into small cubes and slice the mushrooms into medium pieces. 3. Heat butter over medium heat in a heavy-bottomed frying pan. 4. Place the meat in the pan in a single layer. Sear for 3–5 minutes until lightly golden. Transfer the turkey to a dish. 5. Sauté the onion for 5 minutes, stirring occasionally. 6. Add mushrooms, celery, and carrots. Sprinkle with flour and continue cooking for about 7 minutes. Remove from heat, pour in water and broth. Bring to a boil, stirring occasionally (over high heat). Season with salt, thyme, and pepper. 7. Return the turkey pieces to the pan and bring to a boil. Reduce heat slightly, cover with a lid, and simmer for about 25–30 minutes. You can add heavy cream. 8. Adjust seasoning with salt and pepper to taste. Serve the dish hot.
