
Azu
Description
How can you describe azu? It's stewed meat with various vegetables. You can use any meat, but only fillet or tenderloin. Traditionally, azu must include pickled cucumber, onion, potatoes, and tomatoes. When combined, they create a fragrant and delicious dish in which vegetables perfectly complement the meat, while raisins add a sweet note.

Prepare the meat, rinse the fillet and dry it, then cut into medium-sized pieces.

Peel the carrots, potatoes, onion, and garlic, and cut them into medium-sized pieces.

Rinse the raisins and pour over with boiling water. Cut the pickled cucumbers into small cubes.

Heat a skillet, add oil, and fry the potatoes until golden brown.

Remove the potatoes from the skillet and, in the same oil, fry the chicken fillet for about 20 minutes.

Add tomato paste, pickled cucumbers, carrots, onions, and garlic, raisins, and fried potatoes to the chicken, then season with salt and pepper.

Pour water over the stew and simmer until the potatoes and carrots become tender. Sprinkle with chopped herbs on top.
