
Austrian sausages
Description
The recipe won't take much time. Authentic Austrian sausages are made from a whole piece of pork, which you need to grind yourself into minced meat. You can add herbs, cheese, and various spices. Special casings are available at the store, but they must be thoroughly washed. Fry the sausages in a pan, grill them, or boil. Serve hot.

1. Wash the meat and pat it dry with paper towels, then cut into small pieces suitable for grinding into minced meat.

2. Transfer the meat to a bowl, add salt and ground black pepper. Mix thoroughly, cover with plastic wrap, and refrigerate overnight.

3. Take the meat out of the refrigerator and mince it through a meat grinder.

4. Place the meat mixture in a mixer or mix by hand, add ice and all the remaining spices, and thoroughly mix everything.

5. Cut the hard cheese into small squares with a knife, but first put it in the refrigerator—it's much more convenient that way.

6. Add the hard cheese and minced garlic to the meat mixture, and mix everything once again.

7. Rinse the intestines and find the edges, place the intestine onto the meat grinder and fill it, then transfer the sausages to a plate.

8. Heat the water to 75 degrees, then pour it into the pan with the rack and place it in the preheated oven, maintaining the temperature. Place the sausages in the water and cook for about half an hour (until the internal temperature reaches 70 degrees).
