
Avarian khinkal
Description
The dish is prepared without unnecessary complications. Avarian khinkal is a traditional, delicious, and hearty dish of Caucasian cuisine. Don't confuse it with Georgian khinkali! Avarian khinkal consists of fluffy dough, spicy sauce, boiled meat, and broth. Try it! The ready dish can be served at the table.

Step 1

Combine flour, baking soda, and salt in a bowl, pour in the buttermilk (or kefir) and knead the dough. Cover it and let it "rest" for 15 minutes.

Roll out the dough into a flatbread 0.6–0.7 cm thick. Cut it into small squares or diamonds.

Season the meat broth with salt, bring it to a boil, then drop in 5-6 dumplings at a time, stir, and cover with a lid. As soon as the broth comes to a boil and foam rises, uncover, stir, then cover again.

The broth has come to a boil again; take out one khinkali and check it for doneness. When broken open, the khinkali should look like this! If it's ready, remove it with a slotted spoon and quickly pierce it several times with a toothpick or once with a fork so that the khinkali doesn't harden or darken. Then add the next batch of dumplings to the broth.

Serve the dish with a sour cream and garlic sauce and pieces of boiled meat, accompanied by broth to drink.
