
Avar flatbreads
Description
The recipe won't take much time. For a hearty family lunch, fry appetizing Avar flatbreads – a dish of Dagestani cuisine. For the filling you will need boiled potatoes, fried onions, and dill. The flatbreads turn out very soft and tender; such a lunch will be liked by everyone. They can be served with tea or coffee.

Prepare the ingredients for making Avar flatbreads.

For the dough, mix room-temperature kefir with baking soda in a bowl, add a couple of pinches of salt, stir, and let it stand for 1–2 minutes.

Add sifted wheat flour.

Knead a soft yet elastic dough. Let the dough rest under a towel for 20 minutes.

For the filling, peel the potatoes, cover them with cold water and boil until tender for 20 minutes. Add a little salt.

In vegetable oil, sauté the onion diced into small cubes.

Drain the water from the cooked potatoes and add fried onions to them.

Mash the potatoes with a masher, adding fried onions and butter.

Add finely chopped dill to the potato filling and mix. The filling is ready. Let it cool a bit.

Divide the dough into 5–6 pieces, roll each one out, and place about 1–1.5 Tbsp of potato filling in the center.

Gather the edges of the flatbread and roll it out again into an even sheet. You get a round flatbread about 0.5‑0.7 cm thick.

Fry the flatbreads in a dry pan until golden brown—about 2–3 minutes per side.

Spread the hot flatbreads with butter.

Stack the fried Avar flatbreads on top of each other. Serve the finished dish immediately.
