Step 1
Place the meat in a large pot and cover with water. Take a bunch of parsley, separate the sprigs, and tie the stems with a string, then add them to the broth to boil. Add a whole onion and spices—coriander, salt, and pepper—to the pot as well.

Step 2
Pour the flour onto the table and make a well in the center. Add baking soda, salt, and pour in the yogurt. Knead the dough for hinkali, shape it into a ball, cover with a kitchen towel, and set aside.

Step 3
Now let's prepare the sauce. In a large saucepan, melt the butter and add the tomatoes passed through a sieve, pepper, and salt. When the sauce comes to a boil, reduce the heat and simmer for 20 minutes, until the liquid has reduced by half.

Step 4
Finely chop the dill and parsley and add them to the sauce. Boil the sauce for another 5–10 minutes, then add the minced garlic and 2 tablespoons of cold water. Stir the finished sauce, cover with a lid, and set aside in a warm place.

Step 5
Remove the cooked meat from the broth, transfer it to another pot, and set it aside in a warm place.
- 6
Step 6
Divide the dough into 4 parts. Roll out each part to a thickness of 1 cm and cut into rhombuses with sides of 3-4 cm.
- 7
Step 7
Drop the dough into boiling broth; when it floats to the surface, cook for 1 minute.
- 8
Step 8
Remove the dumplings from the broth with a slotted spoon onto a plate and immediately pierce them with a fork so they don't puff up and turn blue.

Step 9
Serve boiled lamb sprinkled with herbs, khinkali, tomato sauce, and a bowl of broth.
